Shio-koji is a seasoning made by fermenting koji (rice malt) with salt. Through fermentation, it develops a complex flavor profile that salt alone cannot provide - a smooth, mellow saltiness without harsh edges, sweetness, thickness, and intense umami.
Shio-koji can not only substitute for basic seasonings like salt, soy sauce, mirin, and sake, its role isn't limited to just being a well-balanced seasoning agent. Its greatest characteristic and excellence lies in maximizing the deliciousness of ingredients when added to the most simple dishes.
With Shio-koji, you'll no longer need artificial and natural flavor enhancers including "Dashi" stock powder, "Mentsuyu (noodle sauce)", Chinese seasonings, granulated chicken stock base, consommé cubes, or vegetable soup stock that we had to rely on for umami. Moreover, unlike the predictable taste that comes from using commercial products, shiokoji prevents flavor fatigue.
